An out-and-back walk can quietly borrow more time than you meant to give it. The interesting café is another block away; the signal takes longer than expected; suddenly lunch is happening at your desk.
For a working-day walk, identify a compact loop near the building and try it when you are not rushing. Include the lobby, lift, crossings and any time needed to change shoes. Those unremarkable minutes belong in the plan too.
Keep part of the break for eating and getting settled again. If you have an appointment immediately afterward, use a shorter version rather than attempting the usual loop at a hurried pace. A walk that leaves you flustered is harder to choose next time.
It helps to know one early exit back to the office. A change in weather or an unexpected call need not turn into a logistical problem. The useful route is the one that fits a real lunch break, including the parts that have nothing to do with walking.
